About Chef David Haviland
Dave is a graduate of the Culinary Institute of America in Hyde Park. He
joined the Castle from a position of Executive Chef at the Ridgeway Country Club in
White Plains. Prior to that he was the Executive Chef at the Rye Town Hilton in Rye Brook
and also held several positions in prestigious hotels in the North East.
Chef Haviland is a member of "La Chaine des Rotisseurs" and recently participated at
"Celebrating Great Taste", an event showcasing products
of New York State with 12 other Celebrity Chefs. His menus take advantage
of fresh, high-quality seasonal and local products.
